Nick Wallace spent his early years growing up on a family farm in Edwards where he started learning how to cook from his grandmother, Lennel Donald. She taught him the art of cooking from fresh and local foods long before that became a popular thing in the culinary world.

“My grandmother’s approach to food was very attractive,” Wallace said. “It was like perfume; it stayed with you for a while. Grandmother was the chef of the family. She would preserve a lot of food, and some of my early memories are of getting chicken eggs out of the coop and digging up sweet potatoes.”
