Liberal food “elitist,” renowned chef Alice Waters, tells the Wall Street Journal in this video that school children need to eat healthier and we should all pay more for food.
Children should eat healthier — and learn healthier habits, which would prevent disease and lower health care costs nationwide — but the bankrupt federal government paying more for organic food in free lunches shouldn’t be part of the solution.
Waters wants to establish smaller distribution systems partnering with local farms that would get healthy, locally grown and preferably organic food to schools.
How about using an idea discussed by former Community Coffee CEO Randy Russ (see MBJ Q&A, May 2, 2011) regarding sustainable farming and applying it to schools:
Take a couple acres of 16th section land near each school, designate it for farming and make kids take a mandatory horticulture class. Food they grow can be eaten in their cafeteria. Everybody wins.
