Chef David Raines has appointed Jackson native, Benjamin Malone, Sous Chef at Flora Butcher. Malone will be involved in the preparation of the shop’s daily lunch menu and expanding catering business. He joins The Flora Butcher after a tenure at Clinton’s N’awlins Grill.
Malone is also a co-owner Jackson’s Cascade On Tap Coffee Company, which he founded with his brothers Tommy and Trey.
